Sugar Cookies

<I haven't made these in a few years - I don't use chia seeds much anymore. Will edit after I make them next.>

Ingredients
  • 1.5 cup All Purpose Flour
  • 0.5 tsp Baking Soda
  • 0.25 tsp Baking Powder
  • 0.75 cup Granulated Sugar
  • 0.5 cup Vegan Butter (Softened)
  • 1 tbsp Vanilla
  • 1 tbsp Flax Seed (ground)
Instructions
  1. Preheat oven to 375°
  2. Grind flax seed in a coffee grinder, then mix in a large bowl with All Purpose Flour, Baking Powder, Baking Soda, and Granulated Sugar
  3. Add vanilla and cut vegan butter into the dry flour mixture until only pea sized chunks remain at the largest
  4. Lay down parchment paper and place dough on top, then lay a second piece of parchment paper on top
  5. Use a rolling pin to flatten the dough to about 1/4th an inch thick
  6. Cut into shapes and place on parchment lined cookie sheet
  7. Bake for 10-12 minutes - they should still be very soft - and then allow them 10-20 minutes to cool before handling or serving them
